Selecting the Pork
We begin with carefully selected pork loin, chosen for its ideal balance of tenderness and flavor. Every cut is prepared with care to create the foundation of a great tonkatsu.
Aging for Perfect Texture
Before cooking, the pork is rested for the right amount of time to achieve the perfect balance of tenderness and chew. This step brings out the texture that makes each bite satisfying.
The Art of Breading
Each piece is coated in flour, egg, and Japanese panko breadcrumbs. This process creates the light, crisp coating that defines authentic tonkatsu.
Frying to Perfection
The katsu is fried at carefully controlled temperatures so the outside stays golden and crispy while the inside remains juicy and delicate. Timing is everything.
